YF Recipe - Melting Moments

Here is a recipe we received from a young sister in Queensland, Australia. We hope you enjoy it, along with the fellowship and family ties that come with it.
Melting Moments - Ingredients
- 1 1/4 cup (250g) butter, softened
- 1 1/2 cups (225g) plain flour
- 1 tsp vanilla extract
- 1/2 cup (80g) icing sugar, sifted
- 1/2 cup (75g) corn-flour
Butter cream - Ingredients
- 80g butter, softened, extra
- 2/3 cup (110g) icing sugar
- 2 tsp finely grated lemon rind
- 1 tbsp lemon juice
Preparation:
Preheat oven to 160°C (320°F). Line 2 oven trays with baking paper.
Beat butter, vanilla extract, and sifted icing sugar in small bowl with electric mixer until light and fluffy. Stir in combined sifted flours in two batches.
With lightly floured hands, roll 2-level-teaspoon portions of mixture into balls and place about 3cm apart on oven trays. Use a fork dusted in icing sugar to gently flatten
Bake in preheated oven, swapping trays halfway through cooking, for 15 minutes or until just cooked through (pale-straw color.) Remove from oven and set aside on wire racks to cool.
Use an electric mixer to prepare butter cream while cooling. Beat the butter and icing sugar in a bowl until light and fluffy. Add the lemon rind and juice and beat until combined. Spread teaspoon of butter cream mixture over the flat side of half the biscuits and sandwich together with remaining biscuits. Dust with sifted extra icing sugar.
Note - Variation: Try passion fruit melting moments for a delicious change. Simply add the strained pulp of one passion fruit to step 1 and replace lemon rind and juice with 1 tbs of passion fruit juice to make the butter cream
