Pesto Sauce Monday, October 06, 2008

We have fresh grown Organic Basil in our garden. Here is a delicious recipe that we made to try out our Basil. It’s absolutely scrumptious! You can put this recipe on pastas, pizza, cold/grilled sandwiches, omelet’s, grilled chicken; your imagination is the limit!

  • INGREDIENTS:
  • ¼ cup pine nuts /or walnuts
  • 2 cups of fresh basil leaves
  • ¼ cup olive oil
  • 2 cloves of garlic
  • ½ cup of graded Romano /or Parmesan cheese

  • PREPARATION:
  • Puree first 4 ingredients in a food processor to make a paste. Add cheese, salt & pepper to taste, and blend again.

  • GRILLED CHEESE WITH PESTO SAUCE:
  • Make the pesto, butter both sides of bread, and put sauce on one side and cheese on the other side. White cheeses taste yummy with this pesto sauce; such as provolone, Swiss, Gouda, and muenster.
  • Fresh Basil is also delicious by itself on sandwiches, pizza, pasta, or wherever you want to give your food an extra zing!

ENJOY!

There is no need to ever waste basil. After you have used the fresh amounts to your contentment, you can either freeze it or dry it for later use.

Freezing Basil:

Fill a Ziploc baggy with water and place your extra basil in the bag to freeze it.

Drying Basil:

Lay the leaves of your leftover basil on a dry paper towel and leave it there until it dries.
